Vegetable curry

Ingredients

  • 250
    ml
    thin coconut milk
  • 2
    onions
  • 2
    red chillies
  • 1
    large carrot
  • 1
    large potato
  • 5
    ml
    turmeric
  • 10
    ml
    anchovy essence
  • 900
    g
    cabbage
  • 250
    ml
    thick coconut milk or cream
  • salt and milled black pepper
 

Method

15-25 minutes
 
Place all ingredients except cabbage, thick coconut milk and seasoning in a large saucepan, bring to boil and simmer for 10 minutes.
Add cabbage and cook for another 5 to 15 minutes, stirring occasionally, or until cabbage is crisp tender.
Stir in thick coconut milk or cream, heat through, check seasoning and serve with fish, rice and sambals.
