Vegetable croquettes

  • 800
    g
    potatoes, peeled and boiled
  • 800
    g
    mixed vegetables (broccoli, cauliflower or carrots)
  • 200
    g
    cooked lentils
  • 2
    eggs
  • salt
  • pepper
  • 25
    ml
    parsley
  • seasoned cake flour
  • 120
    g
    dried breadcrumbs
  • oil for frying
 

Method

 
Mash the potatoes well. Break or cut the other vegetables into smaller uniform pieces. Cook in sufficient water until just soft. Add the potatoes. Also add the lentils and mix well. Add one egg, season to taste with salt and pepper and add the parsley. Shape into rolls and coat with the seasoned flour. Beat the egg slightly. Dip the rolls in the egg and then in the breadcrumbs. Heat sufficient oil in a pan and fry the croquettes until golden brown. Drain on kitchen towelling. Makes 30 croquettes.
