Vegetable bake

    olive oil
  • 25
    ml
    butter
  • 2
    cloves garlic, crushed
  • 1
    red pepper, seeded and cut into strips
  • 4
    courgettes, sliced into rings
  • 400
    g
    chopped tomatoes
  • 1
    tomato stock cube dissolved in a little hot water or 30 ml (2 T) tomato paste
  • salt and freshly ground black pepper
  • 250
    g
    Brie cheese, cut into squares
  • fresh herbs for garnishing
 

Method

 
Heat the oil and butter together in a fairly large saucepan. Stir-fry the garlic, pepper and courgettes for 4-5 minutes until just tender. Add the tomatoes, stock cube or tomato paste and seasoning, cover and simmer for 10-15 minutes. Transfer to an ovenproof dish and sprinkle the cheese on top. Grill under the heated oven grill until melted. Garnish with fresh herbs and serve immediately with fresh wholewheat bread. Serves 4.
