Vegetable and cheese kebabs

    (or 4) large, long-life tomatoes, cut into 8 wedges
  • 250
    mozzarella cheese, cubed
  • spinach leaves or fresh bay leaves
  • 3
    garlic cloves, crushed
  • dried chilli flakes
  • 60
    olive oil


Place the tomatoes, cheese and spinach or bay leaves in a dish.
Mix the garlic and chilli flakes with the olive oil and sprinkle on top.
Leave for at least 15 minutes.
Thread the ingredients onto skewers, alternating them, and braai over hot coals for about 3 minutes or until the cheese has melted.
Serve immediately with the herb loaf and extra garlic oil.
