    fenugreek seeds

    large tomato, chopped
  • 10

    chopped garlic

    grated fresh ginger
  • 1

    mixed vegetables
  • 10
    ml
    ground cumin
  • 10
    ml
    ground coriander
  • 5

    turmeric
  • salt to taste
  • 1
    Litres
    cooked rice
 

Method

 
Stir-fry the onion and cumin and fenugreek seeds in the oil until the onion is golden brown. Add the tomato, garlic and ginger and simmer for about 3 minutes. Add the vegetables and remaining seasonings and simmer until the vegetables are tender but still slightly crisp. Season to taste with salt and fold in the rice. Serve with yoghurt and cucumber sambal (plain yoghurt to which pieces of finely chopped cucumber have been added).
