Veal with caramelised carrot mash

    olive oil

    butter

    veal medallions (x4)
  • Caramelised carrot mash
  • 400
    g
    carrots
  • 30
    ml
    olive oil
  • 45
    ml
    brown sugar
  • Balsamic glaze
  • 2
    onions
  • 125
    ml
    balsamic vinegar
  • 60
    ml
    red wine
 

Method

 
Heat the butter and olive oil in a frying pan until very hot. Fry the steaks until cooked to your liking. Serve with mash and balsamic glaze.

TO MAKE MASH:
Place carrots onto a baking tray. Drizzle with olive oil and sprinkle with sugar. Cover with foil. Roast for 45 minutes or until cooked. Mash, adding a little extra olive oil if needed.

TO MAKE BALSAMIC GLAZE:
Place onions, balsamic vinegar and red wine in a saucepan. Simmer for 15 minutes.
