TO MAKE MASH: Place carrots onto a baking tray. Drizzle with olive oil and sprinkle with sugar. Cover with foil. Roast for 45 minutes or until cooked. Mash, adding a little extra olive oil if needed.
TO MAKE BALSAMIC GLAZE: Place onions, balsamic vinegar and red wine in a saucepan. Simmer for 15 minutes.
