Vanilla waffles

  • 225
    g
    cake flour
  • 15
    ml
    baking powder
  • 30
    ml
    castor sugar
  • 5
    ml
    salt
  • 5
    ml
    vanilla essence
  • 300
    ml
    milk
  • 60
    ml
    melted butter
  • 3
    eggs, separated
  • oil for greasing
  • butter, honey and fresh fruit in season
 

Method

 
Beat together first seven ingredients with egg yolks.
Whisk egg whites until stiff and fold into batter.
Lightly oil and heat waffle pan for two to three minutes.
Spoon a little batter into pan, close and cook for about one minute on each side or until golden brown.
Repeat until all the batter has been used.
Serve immediately with butter, honey and fresh fruit in season or keep warm until needed.
