Vanilla pears with pecorino cheese

  • 6
    ripe but firm pears
  • 30
    ml
    butter
  • 90
    ml
    sugar
  • 5
    ml
    vanilla essence
  • 80
    ml
    brandy
  • pecorino cheese, cut into thin slices
 

Method

15 minutes
 
Halve and core the pears.
Heat the butter in a large pan and arrange the pears carefully, cut side down, in the pan.
Sprinkle with the sugar and heat for about four minutes, shaking the pan occasionally to ensure the sugar dissolves evenly.
Add the vanilla essence and brandy and simmer until the pears are golden brown.
Place two pear halves on each plate and arrange the strips of cheese on top.
Drizzle with the pan juices and serve.
