Vanilla cupcakes with butter icing

  • Cupcakes:
  • 125
    g
    self-raising flour
  • 125
    g
    castor sugar
  • 125
    g
    soft butter
  • 2
    eggs
  • 3
    Tbs
    milk
  • 1/2
    tsp
    vanilla essence
  • Butter icing:
  • 125
    g
    soft butter
  • 250
    g
    sifted icing sugar
  • 2
    Tbs
    milk
 

Method

Cupcakes:
Pre-heat oven at 200.
Blend the butter, castor sugar, flour and eggs until mixture is smooth.
Add the milk one tablespoon at a time.
Add the vanilla essence.
Spoon mixture into the cupcake casings.
Bake until golden (approximately 15 minutes).
Decorate with butter icing when the cupcakes have cooled down.

Icing:
Blend half of the icing sugar with butter until creamy.
Mix the other half with the milk and stir.
Fill the piping bags and decorate.
