Vanilla and ginger snappy cookies

    g
    butter, chilled and diced
  • 300
    g
    flour
  • 100
    g
    sugar
  • 15
    ml
    (1 tbsp) vanilla paste
  • 5
    ml
    (1 tsp) ground ginger
  • 1
    free-range egg
 

Method

Preheat the oven to 180°C. Use some of the butter to grease a baking sheet, and dust it lightly with flour. Put the rest of the flour, the sugar, vanilla, ginger and egg in a bowl, electric mixer or food processor, and mix for a few seconds, then add the butter and mix until the dough forms a ball. Roll out the dough on a floured worktop. Cut out shapes with a cookie cutter and place them on the baking sheet. Bake for about 10 minutes. Remove from oven and cool on a wire rack.
