Vanilla-Yoghurt Loaf Cake

    self-raising flour

    vanilla yoghurt

    Glaze: icing sugar, sifted

    vanilla yoghurt

Oven temperature: 160°C
1. Grease and line a 23cm loaf tin. Beat the butter and castor sugar until light. Add the egg yolks one at a time, beating well after each addition.

2. Sift the flour and add to the mixture, alternating with the yoghurt.

3. Beat the egg whites until soft peaks form and fold into the yoghurt mixture. Pour into the prepared tin and bake in a preheated oven for 60 to 75 minutes or until a skewer comes out clean. Remove from the oven and leave to cool completely.

4. Glaze Combine the icing sugar and the yoghurt, and stir until smooth. Spread over the cake.
Makes: 1 loaf cake.
