Ingredients (8)

250 g endive — separated
1 cocktail tomatoes — halved
10 olives — calamata, chopped
for the dressing:
60 ml fresh basil — chopped
2 Tbs vinegar — white wine
2 Tbs olive oil — extra virgin
1 pinch sugar
1 pinch salt and freshly ground black pepper

Method:

Wash endives, drain and set aside.

Mix salsa ingredients in a bowl.

Pour dressing ingredients into a jar, close lid tightly and shake to mix well.

Add dressing to salsa, mix well and serve with endives for scooping.

More good ideas:
– Swap endives for cos or baby gem lettuce.
– Substitute salsa with creamy Caesar dressing, croutons and crispy bacon.
– For a delicious work lunch, toss the leftovers with a can of drained tuna.
