Ingredients

    endives - separated
  • 1
    packet cocktail tomato (250g) - halved
  • 10
    calamata olives - depipped and chopped
  • For the dressing:
  • 60
    ml
    basil - chopped
  • 2
    Tbs
    white wine vinegar
  • 2
    Tbs
    Extra-virgin olive oil
  • 1
    pinch
    sugar
  • 1
    pinch
    salt and milled pepper
 

Method

Wash endives, drain and set aside.

Mix salsa ingredients in a bowl.

Pour dressing ingredients into a jar, close lid tightly and shake to mix well.

Add dressing to salsa, mix well and serve with endives for scooping.

More good ideas:
- Swap endives for cos or baby gem lettuce.
- Substitute salsa with creamy Caesar dressing, croutons and crispy bacon.
- For a delicious work lunch, toss the leftovers with a can of drained tuna.
