  • 1
    well-scrubbed offal (tripe)
  • salt and freshly ground black pepper
  • 45
    ml
    lemon juice
  • 5
    large potatoes, skinned and cubed
 

Method

+/- 6 hours
 
Rinse the offal well and cut the tripe into pieces. Place in a saucepan and season well with salt, pepper and lemon juice. Add just enough water to cover. Cover the saucepan and simmer slowly for about 6 hours. Add the potatoes an hour before the end of the cooking time and simmer until tender. Mash two of the potatoes in the gravy to thicken it. Serves 6.
