Usu in pepper sauce

Ingredients

  • 500
    g
    tripe, washed thoroughly
  • 800
    ml
    water
  • 60
    ml
    sunflower oil
  • 1
    onion, chopped
  • 10
    ml
    garlic, crushed
  • 0.50
    red pepper, sliced into strips
  • 0.50
    yellow pepper, sliced into strips
  • 250
    ml
    dry white wine
  • 250
    ml
    cook-in sauce of your choice
 

Method

1. Cover tripe with water, bring to the boil and simmer for 3 hours, or until soft.
2. Drain and remove tripe from saucepan. Cut into strips and keep warm.
3. Heat oil in a saucepan and sauté onion, garlic and peppers until soft.
4. Add cook-in sauce and wine, and return tripe to saucepan. Cook for a further 20 minutes.
5. Serve hot over samp.
