Ingredients (9)

50.00 g butter — melted
80.00 ml brown sugar — soft
4.00 bananas — halved
125.00 g butter — softened
375.00 ml brown sugar — soft
2.00 eggs — lightly beaten
375.00 ml flour — self-raising
5.00 ml Baking powder
2.00 bananas — large, mashed

Method:

Preheat oven to 180 ºC. Grease and line a square baking tin.
Pour melted butter over the base of the baking tin and sprinkle with brown sugar.
Arrange bananas, cut side down, over the sugar.
Cream butter and extra soft brown sugar until a light and fluffy mixture forms. Gradually add eggs, beating well after each addition.
Sift flour and baking powder in a bowl, then fold into butter mixture with the mashed banana. Carefully spread into baking tin.
Bake for 45 minutes, or until a skewer comes out clean when inserted in centre of pudding.
Turn out while still warm. Cut into squares and serve, banana side up, with custard or cream.
