Upside-down apricot pudding

    apricot jam
  • 125
    dried apricots, soaked in liquid of your choice
  • 1
    packet vanilla cake mix


Stir 75 ml apricot jam into 125 g of soaked apricots and put into the base of a pudding basin. Make up one cake according to the instructions on the packet and spread over the fruit. Microwave on medium for about eight minutes or bake in a tin half-filled with water, entirely covered with foil, at 190 °C for 40 minutes or until the sponge has risen, and is springy and firm to the touch.
