Method

Preheat the oven to 180 ºC (350 ºF). Line the base of a 20 cm loose-bottomed cake tin with wax paper. Spray the entire pan well with non-stick spray. Mix the apple slices with the honey and arrange in the bottom of the prepared tin. Pour over the honey left in the dish. Sift together the self-raising flour, cinnamon and baking powder, add the sugar and beat in the melted butter, eggs and milk. Stir in the chopped apple. Turn into the prepared tin, spreading evenly. Place the cake tin on a baking sheet and bake for one and a half hours or until a testing skewer comes out clean. Leave to cool in the tin for about 15 minutes before turning out onto a serving platter. Remove the wax paper and serve cold or lukewarm. Makes a medium-sized cake.
