3.00 green apples — cored, sliced into rings
lemon juice
cinnamon — ground, pinch
60.00 g brown sugar — soft
30.00 ml butter
1.00 eggs — extra-large, beaten
BATTER
140.00 g flour — cake
5.00 ml Baking powder
salt — pinch
40.00 g oats
100.00 g brown sugar — soft
100.00 ml milk
2.00 eggs — extra large, whisked
15.00 ml oil

Method:

Preheat the oven to 180 ºC (350 F). Spray a 22 cm loose-bottomed tin with non-stick spray. Arrange the apple slices in the bottom of the tin. Sprinkle with a little lemon juice to prevent them from discolouring. Sprinkle with the cinnamon and brown sugar. Dot with butter and pour the whisked egg on top.
Sift the cake flour, baking powder and salt together. Add the oats and brown sugar and mix. Whisk the milk, eggs and oil together and add to the dry ingredients. Mix and pour the batter over the apples. Bake for 40 minutes or until done. Turn out onto a serving platter and serve with custard or cream.
