    cake flour
  • 20
    ml
    baking powder
  • 3
    ml
    salt
  • 2
    extra large eggs
  • 50
    ml
    sugar
  • 30
    ml
    butter, melted
  • 375
    ml
    buttermilk
 

Method

Sieve the cake flour, baking powder and salt together. Beat the eggs and the sugar and add to the flour mixture. Whisk the butter and milk in to the mixture until smooth.

Heat a frying pan and add some oil to it. Add spoonfuls of batter to the pan, creating evenly spread circles. Cook for about 2 – 3 minutes or until little bubbles begin to surface. Turn over with a spatula and cook for another 2 minutes on the other side. Remove from the pan and serve hot with butter, jam, honey or golden syrup, or with some bacon and caramelised bananas.
