Unbaked fruitcake

    butter
  • 115

    sugar
  • 115
    g
    glacé cherries, chopped
  • 225
    g
    sultanas
  • 225
    g
    dates, finely chopped
  • 225
    g
    mixture of toasted almonds and pecan nuts
  • 3
    ml
    cocoa powder
  • 1
    egg
  • 1
    packet Marie biscuits or cream crackers, broken into pieces
 

Method

 
Place the butter and sugar in a saucepan and bring to the boil, then remove from the heat. Stir in the cherries, sultanas, dates, nuts and cocoa. Then add the egg and the biscuit pieces and mix until well combined.

Grease a loaf tin and fill with the mixture, pressing it fi rmly into the tin to ensure that it sticks together. Refrigerate overnight, then remove the fruitcake from the tin and cut into slices. Store in an airtight container.
