    butter melted
  • 500
    g
    chocolate digestive biscuits, crushed
  • CAKE
  • 100
    g
    white Nestlé EasyMelt Chocolate
  • 500
    g
    cream cheese
  • 150
    g
    castor sugar
  • 150
    ml
    sour cream
  • 4
    large eggs, separated
  • 60
    ml
    cornflour
  • white and milk chocolate, to garnish
  • whole strawberries, to garnish
 

Method

Preheat oven to 180 ºC. Line a 22 cm loose-bottomed tin with baking paper. Combine butter and biscuits and spread evenly into baking tin. Press down. Melt white chocolate over low heat. Beat in cream cheese and sugar until smooth. Mix in sour cream, egg yolks and cornflour. Beat egg whites until stiff. Fold into cheese mixture. Spoon mixture over base and bake for 1 hour. Turn off the oven and leave cheesecake to cool in oven. Melt white and milk chocolate separately over boiling water and decorate strawberries by dipping them into the 2 chocolates and tilting them from side to side until covered. Place the strawberries around the top of the cheesecake before serving. Serves 8-10.
