45.00 ml olyfolie
0.00 0 onion — chopped
0.00 0 fresh ginger — peeled, chopped
0.00 0 red chilli — chopped
0.00 0 bay leaf
125.00 ml water
15.00 ml sout
250.00 ml sugar
80.00 ml red wine vinegar

Method:

Maak: 200 ml
Verhit die olie in ‘n kastrol en soteer die uie tot sag en deurskynend. Die hitte moet matig wees sodat die uie stadig braai en nie verkleur nie.

Gooi die gemmer en brandrissie by en roerbraai dit vir ‘n minuut of wat. Gooi die lourierblaar en water by en laat dit prut totdat al die water verdamp het. Voeg die sout, suiker en rooiwynasyn by en laat die konfyt vir 30 minute prut (sonder ‘n deksel), of totdat dit verdik het. Laat dit afkoel en skep dit in ‘n skoon, gesteriliseerde fles. Bêre die konfyt in die yskas.

Wenk: Hierdie konfyt is die perfekte
pasmaat vir sterk kase,
byvoorbeeld belee cheddar of
gorgonzola, maar eintlik smaak
dit vorentoe saam met enige
kaas. Dit is ook heerlik op ‘n
toebroodjie met kouevleis.
