Tzatziki (Yoghurt with cucumber)

    large cucumber, grated
  • 3
    cloves garlic, crushed
  • 25
    olive oil
  • 500
    Greek or Bulgarian yoghurt
  • 10
    white wine vinegar


20 minutes plus chil
Place grated cucumber in a colander and sprinkle with salt. Stand for 15 minutes, then press out excess liquid. Mix remaining ingredients with prepared cucumber and refrigerate for 30 minutes. Garnish with mint leaves. Serve with pita bread or use to top meat, chicken or fish dishes. Serve as part of a meze platter along with other Greek appetisers such as hummus, taramasalata, olives, feta cheese and dolmades.
