    cake flour
  • 20
    ml
    baking powder
  • 5
    ml
    salt
  • 125
    ml
    margarine
  • 250
    ml
    cooked phutu
  • 125
    ml
    castor sugar
  • 5
    ml
    cinnamon
  • 2
    eggs
  • 250
    ml
    sour milk
 

Method

1. Preheat oven to 180°C. Grease a muffin tin.
2. Sift together flour, baking powder and salt into a bowl.
3. Rub in margarine until mixture resembles fine breadcrumbs.
4. Add phuthu and castor sugar. Mix in well using a fork to achieve a fine texture.
5. Beat together eggs, sour milk and cinnamon, add to dry ingredients and mix well.
6. Spoon into muffin tins. Bake in oven for 30 minutes until skewer comes out clean.
7. Turn out onto a wire rack to cool. Delicious with butter and grated cheese or jam.
