Ingredients (9)

500.00 ml flour — cake
20.00 ml Baking powder
5.00 ml salt
125.00 ml margarine
250.00 ml maize meal — phutu, cooked
125.00 ml castor sugar
5.00 ml cinnamon — ground
2.00 eggs
250.00 ml sour milk

Method:

1. Preheat oven to 180&#176C. Grease a
muffin tin.
2. Sift together flour, baking powder and
salt into a bowl.
3. Rub in margarine until mixture resembles fine breadcrumbs.
4. Add phuthu and castor sugar. Mix in well using a fork to achieve a fine texture.
5. Beat together eggs, sour milk and
cinnamon, add to dry ingredients and mix well.
6. Spoon into muffin tins. Bake in oven for 30 minutes until skewer comes
out clean.
7. Turn out onto a wire rack to cool. Delicious with butter and grated cheese
or jam.
