Two tomato sauce

  • 15 ml olive oil
  • 2 onions, finely chopped
  • 2 cloves garlic, crushed
  • 125 ml oil-packed sun-dried tomatoes, drained and chopped
  • 1 kg ripe tomatoes
  • 5 ml brown sugar
  • 15 ml balsamic vinegar
  • salt and milled pepper


Heat oil in a pan, add onions and garlic and sauté gently until onions are translucent, about 5 minutes.
Stir in sun-dried tomatoes and cook for 2 minutes.
Add tomatoes, sugar, balsamic vinegar, salt and milled pepper, and simmer on low heat for 20-30 minutes, until sauce has reduced by half.
Blend half the sauce in a food processor and mix with the other, chunky half.
Cook's note:
Tomatoes can be replaced with tinned, chopped tomatoes.
To make a lighter sauce, omit the sun-dried tomatoes.
