Ingredients

  • 600
    g
    cake flour
  • 10
    ml
    salt
  • 10
    ml
    sugar
  • 30
    ml
    olive oil
  • 10
    g
    instant yeast
  • 450
    ml
    lukewarm water
 

Method

 
Place all the ingredients except the water in a bowl and mix lightly. Add just enough lukewarm water to form a smooth, elastic dough. Knead well. Coat with a little oil and cover with plastic wrap. Leave in a warm place to rise until doubled in volume. Knock the dough back, roll out until about 1 cm thick and cut out 15 cm circles. Make small diagonal incisions all over each dough circle and leave to rest for 10 minutes. Heat a heavy-based pan, cast-iron pan or skillet, but do not add any oil. Place the dough circles in the heated pan and toast until brown on both sides and cooked in the middle.
