Turkish pita bread

  • 600
    g
    cake flour
  • 10
    ml
    salt
  • 10
    ml
    sugar
  • 30
    ml
    olive oil
  • 10
    g
    instant yeast
  • 500
    ml
    lukewarm water
 

Method

 
Place all the ingredients, except the water, in a bowl and mix lightly.
Add water as needed and knead until the dough is smooth and elastic and no longer sticks to your hands.
Cover with clingwrap and leave in a warm, place to rise until doubled in bulk.
Roll the dough into a 1 cm thick round and cut out circles 15 cm in diameter.
Make criss-cross cuts over the surface of the dough and leave to rise in a warm place for 10 minutes.
Heat a heavy-based pan, cast-iron pan or 'skottel braai', but do not grease with oil.
Place the pita in the pan and fry until brown on both sides and cooked in the centre.
