Ingredients

  • 375
    ml
    water
  • 40
    ml
    gelatine
  • 400
    g
    white sugar
  • 80
    ml
    cornflour
  • 1
    ml
    citric acid
  • 15
    ml
    lemon juice
  • 50
    ml
    icing sugar
  • sugar crystals, to decorate
  • few drops pink food colouring
 

Method

10 minutes
 
Place 125 ml water into a small container and add the gelatine. Set aside for a few minutes. Combine white sugar, 30 ml cornflour and citric acid in a saucepan. Add remaining water and stir over a low heat to dissolve. Bring to the boil and boil for seven minutes. Remove from the heat and add lemon juice or rose water, gelatine and food colouring. Mix well, then pour into a 16 x 25 cm baking tin. Leave to set for two minutes, then sprinkle with sugar crystals. Allow to set completely. Cut into squares and roll each square in a mixture of the remaining cornflour and icing sugar.
