Turkish courgette fritters

    courgettes
  • 4
    spring onions
  • 45
    ml
    chopped fresh basil
  • 60
    ml
    cake flour
  • 3
    eggs
  • 5
    ml
    crushed dried chilli
  • 3
    cloves garlic
  • salt and pepper
 

Method

 
Prepare the courgettes as follows: Wash and trim. Lay a clean tea towel over a bowl and grate the courgettes on to the towel. Sprinkle with salt and leave to draw for about 15 minutes.
Enclose the grated courgettes in the tea towel and twist the ends of the towel to tighten. Squeeze out the bitter juices with your free hand.
Place grated courgettes in a bowl and mix in the rest of the ingredients. Season.
Heat a little oil in a heavy-based pan. Drop a few tablespoonfuls of the mixture into the pan at a time. Gently press flat and fry over medium heat for 2 to 3 minutes on each side until golden.
Drain on absorbent paper.
Serve warm with plain yoghurt.
