Turkey with redcurrant sauce and butternut shavings

  • REDCURRANT SAUCE
  • 375
    g
    frozen redcurrants, thawed
  • 3
    oranges, flesh and grated peel
  • 100
    g
    brown sugar
  • BUTTERNUT SHAVINGS
  • 1
    large butternut, peeled and seeded
  • sunflower oil for deep frying
  • salt
  • cooked turkey slices to serve
 

Method

 
SAUCE: Place ingredients in a saucepan and simmer gently for 45 minutes over low heat, stirring occasionally. Pour into a serving dish and serve immediately. Alternatively, cool and refrigerate until needed. Reheat before serving.
BUTTERNUT SHAVINGS: Cut butternut into paper-thin slices. Deep fry in batches in hot oil until golden brown. Drain on kitchen paper and season with salt. Serve sauce and shavings with turkey.
