Turkey salad with cheese and sesame seeds

    diced, cooked turkey meat or smoked turkey breast
  • 250
    ml
    thinly sliced celery
  • 230
    g
    water chestnuts, diced
  • 125
    ml
    thinly sliced spring onions
  • 125
    ml
    thinly sliced strips of Gruyére cheese
  • DRESSING
  • 15
    ml
    sesame seeds
  • 125
    ml
    olive or sesame oil
  • 60
    ml
    white wine vinegar
  • 60
    ml
    lemon juice
  • 5
    ml
    mild mustard
  • salt and freshly ground pepper to taste
  • GARNISH
  • Hard-boiled eggs
  • Tomato wedges
 

Method

 
1. Combine all salad ingredients in a bowl. DRESSING 2. Sauté the sesame seeds in the olive or sesame oil until lightly browned, remove from heat and cool. Mix together the vinegar, lemon juice and mustard. Add the oil and sesame seeds, whisking the mixture as you pour. 3. Season to taste and pour over the turkey salad. Toss well to coat, cover and refrigerate for 3 hours. 4. Serve with shredded lettuce and garnish with egg and tomato wedges. Serves 4.
