Ingredients (14)

750.00 ml turkey — diced, cooked
250.00 ml celery stalks — thinly sliced
230.00 g water chestnuts — diced
125.00 ml spring onions — thinly sliced
125.00 ml gruyère cheese — thinly sliced
DRESSING
15.00 ml sesame seeds
125.00 ml olive oil — or sesame oil
60.00 ml vinegar — white wine
60.00 ml lemon juice
5.00 ml mustard — mild
sea salt and freshly ground black pepper
garnish — garnish
eggs — hard-boiled
tomatoes — wedges

Method:

1. Combine all salad ingredients in a bowl.
DRESSING
2. Sauté the sesame seeds in the olive or sesame oil until lightly browned, remove from heat and cool. Mix together the vinegar, lemon juice and mustard. Add the oil and sesame seeds, whisking the mixture as you pour.
3. Season to taste and pour over the turkey salad. Toss well to coat, cover and refrigerate for 3 hours.
4. Serve with shredded lettuce and garnish with egg and tomato wedges.
Serves 4.
