Turkey and peach pitas

    pita breads
  • 300
    g
    turkey, shredded
  • 2
    cling peaches (you may need more)
  • 150
    ml
    mayonnaise
  • 25
    ml
    hot curry powder
  • salt and pepper to taste
  • 60
    ml
    sunflower seeds
  • watercress
 

Method

 
Halve pita bread to make a pocket, line with watercress or frisee lettuce Peel peaches, slice lengthwise. Combine mayonnaise, curry powder and seasoning. Fill pita pockets with peach slices, sunflower seeds and shredded turkey. Finish off with a good dollop of curry mayonnaise.
