Tuna starter

    butter
  • 40
    ml
    cake flour
  • 500
    ml
    milk
  • 1
    onion, finely chopped
  • 10

    oil
  • 2
    cans (185 g each) tuna in brine, drained
  • 410
    g
    canned asparagus pieces, drained
  • 285
    g
    canned button mushrooms, drained
  • salt and freshly ground black pepper
  • toast, crust removed (one slice per person)
  • Italian parsley to garnish
 

Method

 
Melt the butter over moderate heat, add the flour and stir for one minutes.
Add the milk and stir over moderate heat until a thin white sauce forms.
Fry the onion in the oil until soft and add to the white sauce along with the tuna, asparagus and mushrooms.
Add salt and pepper to taste and simmer for 10 to 15 minutes.
Serve on toast, season with black pepper and garnish with Italian parsley.
