Tuna slices

    fresh tuna
  • MARINADE

    coarse salt
  • 25
    ml
    white vinegar
  • 25
    ml
    olive oil
  • 1
    bay leaf
  • 3
    cloves garlic, crushed
  • 1
    whole cinnamon stick
  • fresh herbs like parsley, thyme and origanum
  • 2
    ml
    allspice
  • 5
    ml
    paprika
  • 5
    ml
    ground cumin (jeera)
  • 250
    ml
    red wine
 

Method

 
Rinse the tuna and remove the skin and bones. Cut the fish into slices 1,5 cm thick and arrange in a large dish. Blend all the ingredients for the marinade and pour over. Marinate, preferably overnight, but for at least 3 hours. Heat the oil in a pan and fry the tuna slices until done. Remove from the pan. Pour off most of the oil and pour the remaining marinade into the pan. Reduce until the sauce thickens slightly and serve with the tuna slices.
