Tuna salad

    ml
    cooked brown rice
  • 200

    tuna in brine
  • 1
    onion, finely chopped
  • 1
    tomato, diced
  • 1
    green apple, cored and diced
  • 2
    hard-boiled eggs, quartered
  • 80
    ml
    mayonnaise, blended with a little milk
  • salt and freshly ground black pepper to taste .
 

Method

 
Spoon the brown rice onto a plate. Flake the tuna pieces lightly and arrange on top of the rice. Sprinkle with the chopped onion, tomato and apple. Arrange the egg quarters alongside and spoon the mayonnaise on top. Season with salt and pepper and mix the salad lightly just before serving. Serve with wholewheat bread rolls. Serves 4.
