Tuna rissoles with wasabi mayonnaise

    solid pack tuna in brine, well drained
  • 30
    ml
    soy sauce
  • 2
    eggs
  • 30
    ml
    cornflour
  • milled pepper to taste
  • sunflower oil for frying
  • 1
    cucumber, sliced lengthways into ribbons
  • 4
    pita breads, grilled
  • WASABI MAYONNAISE
  • 45
    ml
    sour cream
  • 15
    ml
    mayonnaise
  • 10
    ml
    wasabi paste
 

Method

 
MAYONNAISE: Mix sour cream, mayonnaise and wasabi paste. Set aside while making rissoles. In a medium-size bowl combine tuna, soy sauce, eggs, cornflour and pepper. Divide mixture into 4 portions and roll into rissoles. Heat oil in a large frying pan, add rissoles and fry for 3 minutes on each side, or until golden brown and just firm to the touch. Remove from pan. Top pita breads with cucumber ribbons, place a rissole on top of each and add a dollop of mayonnaise. Serve hot or cold.
