Tuna rice salad

Ingredients

  • 5
    cups cooked Basmati rice, cooled
  • 500
    g
    tinned tuna, drained
  • 1
    cup
    peas, cooked
  • 1
    cup
    sweetcorn, cooked
  • 1/2
    large cucumber, chopped
  • 3
    rounds Feta cheese, chopped/crumbled
  • Handful Italian Parsley, chopped
  • Dressing:
  • 1
    cup
    mayonnaise
  • 1/2
    cup
    fat free plain yoghurt
  • Squeeze of lemon juice
  • 1
    tsp
    paprika
  • Salt and pepper to taste
  • Crushed chillies (optional)
 

Method

20 mins
 
Combine all the salad ingredients and mix well.
Combine the dressing ingredients, mix and pour over the salad.
Mix well and serve.
