Tuna rice

    ml
    rice
  • 1
    onion, finely chopped
  • 1
    green pepper, seeded and diced
  • 2
    stalks celery, sliced into rings
  • 2
    cloves garlic, crushed
  • oil
  • 400
    g
    tuna, drained
  • 250
    ml
    frozen peas
  • 25
    ml
    lemon juice
  • salt and freshly ground black pepper
  • freshly chopped parsley
 

Method

 
Cook the rice in 625 ml (2 1/2 c) salted boiling water until tender. Drain. Sauté the onion, green pepper, celery and garlic in a little oil until tender. Add the rice, tuna and peas and mix. Season with lemon juice and salt and pepper to taste. Heat until warmed through. Sprinkle with a little chopped parsley just before serving. Serves 4.
