Tuna pasta salad

Ingredients

    vegetable stock cubes
  • 350
    g
    risoni (pasta rice)
  • 60
    ml
    oil
  • 1
    lemon, juice
  • 60
    ml
    mayonnaise
  • 1
    clove garlic, crushed
  • 1
    cucumber, sliced
  • 1
    red or green pepper, chopped
  • 8
    black olives, halved and pitted
  • 6
    gherkins, sliced
  • 185
    g
    tuna chunks in water, drained
  • 2
    hard-boiled eggs, coarsely chopped
  • 4
    pita breads
 

Method

10 minutes
 
1. Dissolve stock cubes in one litre hot water and pour into a saucepan. Add risoni and cook according to pack instructions until tender. Drain and cool. 2. Mix oil, lemon juice, mayonnaise and garlic and mix lightly into the risoni. 3. Add cucumber, red pepper, olives, gherkins, tuna and egg slices and toss lightly. Serve with pita breads.
