Ingredients (12)

12.00 white bread — thinly sliced
butter
30.00 ml onion — finely chopped
2.00 celery stalks — sliced into rings
30.00 ml green pepper — diced
oil
370.00 g tuna — tinned and drained
125.00 ml mayonnaise
salt and freshly ground black pepper
Tabasco sauce — a few drops
breadcrumbs
fresh parsley — chopped

Method:

Preheat the oven to 180 ºC (350 ºF). Spray a muffin tin with non-stick spray. Cut out circles of bread using a 10 cm cookie cutter. Butter each slice generously. Line each hollow of the muffin tin with a slice of bread, buttered side facing down. Press the bread slices firmly into the hollows. Bake for about 10 minutes until golden brown. Sauté the onion, celery and green pepper in a little oil until soft. Add the tuna and mayonnaise and mix well. Season well with salt and pepper and Tabasco sauce. Spoon a little of the mixture into each hollow and sprinkle with cheese and breadcrumbs. Bake for 10 minutes or until the cheese has melted. Sprinkle with chopped parsley. Serve hot or cold.
Makes 12 tartlets.
