Tuna and tomato rice

    uncooked rice
  • 15

    oil
  • 2
    cloves garlic, crushed
  • 1
    onion, finely chopped
  • 4
    rashers streaky bacon, chopped
  • 175

    fresh button mushrooms, sliced
  • 410
    g
    tomatoes, chopped
  • 200
    g
    tuna, drained
  • salt and pepper
  • 30
    ml
    chopped fresh parsley
 

Method

 
1. Cook rice in boiling salted water for 10 to 12 minutes according to directions on the packet. 2. Heat oil and fry garlic, onion and bacon for 5 minutes. Add mushrooms and cook for 3 minutes. 3. Stir in tomatoes and tuna, season well and heat through for 5 minutes. 4. Gently stir cooked rice and parsley into tomato and tuna sauce.
