Tuna and porridge pie

    bacon (use more if desired)

    cooked stiff mieliemeal porridge

    tuna packed in oil
  • 2
    eggs, whisked
  • paprika or cayenne pepper
  • salt
  • grated cheese for sprinkling on top


Preheat the oven to 180 ºC (350 ºF). Grease an ovenproof dish with margarine. Fry the bacon with the garlic until done but not crisp. Set a few rashers aside and chop the rest. Mix the bacon, garlic, mieliemeal porridge, mayonnaise and tuna with the oil and the whisked eggs and season to taste with paprika or cayenne pepper and salt. Turn into the prepared dish and place the remaining bacon on top. Sprinkle with a little grated cheese and paprika and bake for about 20 minutes or until the cheese has melted.
