Tuna and mushroom pasta

    shell pasta
  • 25
    ml
    olive oil
  • 125
    ml
    fresh button mushrooms, halved
  • 1
    bunch spring onions, sliced
  • 185

    shredded tuna in water, drained
  • 105
    g
    smoked mussels, drained (optional)
  • 375
    ml
    milk
  • 50
    ml
    butter
  • 50
    ml
    cake flour
  • 125
    ml
    Cheddar cheese, grated
 

Method

25 minutes
 
1. Boil pasta in plenty of boiling, salted water for 10 to 12 minutes until al dente. 2. While pasta is cooking, heat oil in frying pan and sauté mushrooms and spring onion for two to three minutes. Add tuna and mussels and heat through. 3. Drain pasta and add the tuna mixture. Toss to combine. Keep warm while you prepare the sauce. 4. Heat butter in a saucepan until melted. Add flour and cook for 30 seconds. Add milk gradually. Sir until thickened. Remove from the heat and add the cheese. Season to taste with salt and freshly ground black pepper. 5. Serve tuna noodles drizzled with cheese sauce.
