Cucumber wrapped tuna rolls

    sashimi-quality tuna, cut into large chunks

    large lemon, juice

    fish sauce

    cucumber
  • DIPPING SAUCE

Method

 
Place tuna chunks into shallow dish.
Mix garlic, ginger, citrus juices, sugar and fish sauce together and pour over tuna.
Allow to marinate for about two hours.
Meanwhile, blend dipping sauce ingredients together and set aside.
Using a potato peeler, shave long ribbons of cucumber and cut in half.
Drain tuna.
Wrap a piece of tuna with the cucumber ribbon and secure with a lemongrass stick, simple bamboo skewer or whatever else you can find.
Serve with the dipping sauce on the side.
