Tuna and butter beans on focaccia

    tuna in oil, drained
  • 410

    butter beans, drained
  • 30
    ml
    freshly chopped parsley
  • sea salt and milled black pepper
  • 5
    ml
    capers
  • 60
    ml
    olive oil
  • 4
    slices focaccia, toasted
  • 1
    medium to large tomato, thinly sliced
  • 1
    red onion, thinly sliced
 

Method

 
Break tuna up into chunks. Mix lightly with butter beans, parsley, salt, pepper, capers and half the olive oil. Brush focaccia with remaining olive oil. Layer tomato slices on top of focaccia, heap spoonfuls of tuna and bean mixture on top, then arrange onion rings over mixture.
