Ingredients (8)

4.00 tomatoes — ripe
60.00 ml olive oil
1.00 lemon juice
sea salt and freshly ground black pepper
800.00 g butter beans — tinned and drained
15.00 black olives
1.00 onion — small, thinly sliced
400.00 g tuna in oil, drained — solid pack

Method:

Dice three of the tomatoes. Process the fourth in the food processor. Add the oil and lemon juice and season generously with salt and pepper. Process until well blended.
Gently mix the beans, olives and onion slices.
Flake the tuna into large chunks and add to the salad.
Pour over the salad dressing, adjust the seasoning if necessary and mix lightly.
Serve with fresh crusty bread.
