Tuna and butter bean salad

  • 4
    ripe tomatoes
  • 60
    ml
    olive ail
  • 1
    lemon, juice
  • salt and freshly ground black pepper
  • 800
    g
    butter beans, drained
  • 15
    black olives
  • 1
    small onion, thinly sliced
  • 400
    g
    solid pack tuna in oil, drained
 

Method

 
Dice three of the tomatoes. Process the fourth in the food processor. Add the oil and lemon juice and season generously with salt and pepper. Process until well blended. Gently mix the beans, olives and onion slices. Flake the tuna into large chunks and add to the salad. Pour over the salad dressing, adjust the seasoning if necessary and mix lightly. Serve with fresh crusty bread.
