    sugar

    seedless raisins
  • 150

    golden sultanas
  • 150
    g
    currants
  • 100
    g
    dates, chopped
  • 150

    mixed cut peel
  • 100
    g
    glacé cherries, halved
  • 150
    ml
    brandy
  • 500
    ml
    cake flour
  • 5
    ml
    bicarbonate of soda
  • 10
    ml
    baking powder
  • 5
    ml
    mixed spice
  • 5
    ml
    ground ginger
  • 3
    ml
    ground cinnamon
  • 2
    extra-large eggs, lightly whisked
 

Method

1 hour
 
Preheat the oven to 180 ºC. Line a 23 cm tin with aluminium foil and grease well. Place all the ingredients up to and including the brandy in a saucepan and bring to the boil. Boil thoroughly and remove from the heat. Meanwhile sift all the dry ingredients together in a large mixing bowl, add the boiled mixture and mix well. Mix in the whisked eggs and turn the batter into the prepared tin. Bake for 1 hour or until done. Makes a medium cake.
