150.00 g butter
250.00 ml water
250.00 ml sugar
150.00 g raisins — seedless
150.00 g sultanas — golden
150.00 g currants
100.00 g dates — chopped
150.00 g mixed citrus peel
100.00 g glacé cherries — halved
150.00 ml brandy
500.00 ml flour — cake
5.00 ml Bicarbonate of soda
10.00 ml Baking powder
5.00 ml mixed spice — ground
5.00 ml ginger — ground
3.00 ml cinnamon — ground
2.00 eggs — extra-large, lightly whisked

Method:

Preheat the oven to 180 ºC. Line a 23 cm tin with aluminium foil and grease well.
Place all the ingredients up to and including the brandy in a saucepan and bring to the boil. Boil thoroughly and remove from the heat.
Meanwhile sift all the dry ingredients together in a large mixing bowl, add the boiled mixture and mix well. Mix in the whisked eggs and turn the batter into the prepared tin. Bake for 1 hour or until done.
Makes a medium cake.
