Trotters with beans

    pig's trotters or pork shanks
  • 300
    g
    butter beans or sugar beans, rinsed and soaked overnight
  • 30
    ml
    vinegar
  • 5
    ml
    white sugar
  • 2
    cloves garlic, crushed
  • 1
    large onion, sliced
  • 2
    red chillies, chopped
  • 5
    ml
    ground coriander
  • 5
    ml
    curry powder
  • 10
    ml
    turmeric
  • 20
    ml
    gravy powder
 

Method

 
Soak beans in cold water overnight. Drain and cover with fresh water, then simmer for 1 hour or until tender. If using trotters, cover with salted water and soak for one hour. Drain well. Cover trotters or shanks with plenty of cold water and cook until tender - 1 to 2 hours. Add vinegar, sugar, garlic, onions, chillies, coriander, curry and turmeric. Simmer, uncovered, for 10 minutes. Add cooked beans, thicken with gravy powder and mix lightly. Cook for a further 20 minutes.
