Tropical fruit with rum

    pineapple, cleaned and sliced

    ripe mangos, peeled and sliced into wedges
  • 2
    small ripe pawpaws, pips removed, peeled and cut into wedges
  • 1
    lime or lemon, sliced into wedges

    light white rum

    granadilla pulp
  • 125
    smooth fat free cottage cheese

    fat free plain yoghurt

    honey (optional)


Arrange the fruit slices and wedges in a single layer in a large dish. Sprinkle with the rum and chill for at least 2 hours. Mix the granadilla pulp, cottage cheese, yoghurt and honey (if using) and spoon into a separate dish. Chill until needed. Serve with the fruit.
