    Boston butt or slipper ham
  • 1
    bay leaf
  • 500
    ml
    apricot juice
  • 200
    ml
    readymade tropical fruit marinade
  • 2
    mangoes
  • 1
    small papaya
  • 1
    pineapple
 

Method

 
1. Boil joint with bay leaf in apricot juice for 30 minutes per 500 g. 2. Remove meat from juice and place in roasting pan. Pour half the marinade over meat and roast at 200 ºC for 30-40 minutes or until it forms a glaze, basting from time to time with remaining marinade. 3. Remove from oven. Serve on a platter surrounded by a selection of tropical fruit such as mangoes, pineapple and papaya. Serves 4-6
